We can use domestic chicken or native chicken because both have their own characteristics. Domestic chicken has more tender meat and cooks faster. Meanwhile, free-range chicken has a more savory taste with a denser meat texture.

The hallmark of the chicken serundeng, of course, is the crispy grated coconut crumbs. The addition of coconut water and grated also gives the chicken extra savory. This is what makes the aroma more fragrant. So that the texture of this srundeng chicken recipe is crispy and not wet, fry the chicken and grated coconut in hot oil.

Ingredient 

• 1 chicken, skin removed, cut into 8 pieces 
• 250 ml coconut water 
• 3 bay leaf 
• 2 lemongrass stalks, bruised 
• 2 Pack Royco Seasoning Ready to Use Soto Fried Rice 
• 6 cm galangal, grated the oil for frying

Serundeng 

• 200 g half old coconut, grated lengthwise 
• 1 tsp Royco Chicken Broth 
• 1 tbsp Sweet Soy Sauce

How to make 

1. Heat 3 tablespoons of oil, saute ground spices until fragrant. Enter the chicken meat, coconut water, bay leaf, lemongrass, grated galangal, and Royco Seasoning Ready to Use Fried Rice Soto. Stir well. 

2. Cook until the chicken changes color. Add all the ingredients together, mix well. Cook over low heat while covered until the chicken is cooked. Stir or turn the chicken occasionally so that it cooks evenly. Remove and set aside. 

3. Heat the oil, fry the chicken meat along with the serundeng until cooked and browned. Lift. Serve with hot Javanese chili sauce.
